My Healthy(ish) 9 Ingredient Taco Tuesday
Taco Tuesday: a tradition I’ve upheld for as long as I remember. There’s no greater pair than summertime and street tacos. (Plus there’s always a deal for cheap tacos on Tuesday) And although my love for tacos has yet to slow down, my metabolism has. I’m sure every twenty-something has heard a thirty-something complain about how it all goes downhill once you hit 30. And although I can say first-hand it does NOT all go downhill after 30 metabolisms often do, in fact, tend to slow down. But life is all about balance and adjustments. I’m not against a good hearty taco but when I can make the adjustments for a healthier way to eat something, I’ll be the first one to at least try it. *read - Really just save more room for chocolate later on*
Though my loyalty to the anatomy of a taco (complete with corn tortilla) is strong, Taco Tuesdays in salad form have been a healthy and delicious substitute. To add an extra dose of healthy, I’ve replaced ground beef with ground turkey, mixed in with taco seasoning. Follow the directions below for the tastiest Taco (Salad) Tuesday
1 16oz package of Ground Turkey
Quarter of an white onion diced
Taco Seasoning
1 tbs chili powder
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 dried red pepper flakes
1/4 tsp ground oregano
1/2 tsp paprika
1 1/2 tsp cumin
1 tsp kosher salt
1 tsp pepper
Mexican Cheese Blend
Corn
Sour cream
Crumbled tortilla chips
Refried beans
Green salsa
Heat oil up in a pan on medium high, add diced onions. Heat up for 2 minutes or until translucent in color.
Add ground turkey, breaking up chunks
Add taco seasoning, heat until cooked through
Prep Salad
Lay out salad on plate
Spoon out 2 tbs heated refried beans
Add layer of cooked ground turkey
Add condiments
Shredded cheese
Corn
Sour cream
Green salsa
Crumbled tortilla chips
Remember this salad is super light. Grab chips and add some homemade guac if you’ve got a bigger appetite.
3 avocados
1/2 jalepeño
1/4 onion
2 cloves of garlic
one juice of a lime
salt to taste
Mash up the avocados first, chop all of your ingredients to the mashed avocado and mix.
Optional* Add a spicy marg! It’s a little lower on calories than a normal margarita and it’s STRONG.
1.5 ounces of tequila
2 ounces of jalepeño limeade,
Half a lime squeezed, stir with ice.
There you have it! Taco Tuesday made healthy…ish. Slow recipes and slow food are some of my favorite things to make, but sometimes, you just need a quick an easy go-to weeknight dinner. I hope this becomes one for you!
