Well folks, despite the insanity of 2020 and the long hours spent at home, this year has actually flown by. To think we are in the very last week of August is a little mind-blowing! If you are lucky enough to live in an area of the country that has some sort of a fall, you’ll be welcoming in the new season soon. Living in Los Angeles means we have another month, at least, of hot weather. We won’t be truly welcoming in heavier sweaters and chillier temps until the end of October, early November. We find ourselves in this weird summer/fall in between, where we’re done with the heat, but also not totally ready to let go of summer. We’re ready to embrace the cooler temperatures and holiday festivities, but also not ready to let go of the long summer nights. So, to help our transition out of one season into another, what better way than to EAT. And what’s easier than chopping some stuff up and throwing it into the Instapot? Ok, it might involve more than just chopping and throwing but it’s easy and after all these COVID ups and downs: Easy. Is. Good. And if you don’t have an Instapot, now might be the time to invest because here is a round-up of our delicious top 8 Instapot recipes to transition you gently out of summer and into fall.

Lemon Pepper Salmon

Easy and Paleo, the total prep and cook times clocks in at under 15 minutes with a total of 296 calories. This recipe serves 3-4 and is sure to keep you feeling light and summery.

Pulled Pork Sandwiches

Nothing feels more like summer than a sweet backyard barbecue. Make these mouthwatering pulled pork sandwiches in the Instapot and recreate that summer feeling. This recipe yields 8 servings, perfect for a couple of leftover meals to keep that flavor party going.

Pressure Cooker Beer Braised Pulled Ham

Who knew Rosemary and Beer could be in the same recipe together? All about it. This recipe calls for a full bone-in ham so it’s definitely a commitment but worth it. Ham is one of the best seasonal foods, perfect for light summer sandwiches and a sign of kicking off the holidays.

Sweet Potato Chicken Curry

Curry being a traditionally heavier dish, this recipe is great for getting into that fall vibe while staying healthy. Also a Paleo option and only 335 calories, this dish clocks in at 35 minutes total with prep and cook time and serves up to 6. A slow cooker option is available as well.

Spicy Peanut Soup with Sweet Potato & Kale

A stew-like soup, perfect for channeling Fall in, this recipe has a slow cooker option and stovetop. Creamy and flavorful, you’ll get the spicy kick from the jalpeño this recipe calls for. Serving 6 and only 288 calories, you could definitely afford a second helping.

Creamy Chicken Gnocchi Soup

Or as I’d like to call it, a loaded Chicken Noodle Soup. This soup might come in handy when you are needing some comfort food over losing the warmth of summer weather and longer days. (5:30 PM IS JUST TOO EARLY TO BE DARK) Just over an hour to prep and cook but can you even imagine the smell it will fill your house with?!

Butternut Cauliflower Soup

You could never deny the Fall like qualities of Butternut Squash. This may be one of my all time favorite recipes, with a prep and cook time of under 30 minutes and only 100 calories. I have a habit of eating progressively worst as the fall season seeps into the holiday season, so a delicious and healthy recipe like this is perfect. Topped with bacon crumbles and cheddar cheese and all my fall dreams have come true.

Whole Rotisserie Chicken

I’m extremely guilty of buying the whole Rotisserie chicken already made at the grocery store, more times than I’d like to admit. The idea of roasting an entire chicken seemed a little daunting to me. If your stomach can handle rubbing a raw bird with spices, you’ll love how easy this is. Total prep and cook time under 45 minutes for an incredibly flavorful and juicy chicken and a house smelling delicious.
